Elijah’s Garden

The mission of Elijah’s garden is to grow produce organically for those in need in the community. Students grow vegetables and herbs from seed in the winter months, transplant the seedlings and then tend the garden during the growing season. More than 300 lbs of produce were harvested during the first year. This included tomatoes, zucchini, summer squash, cucumbers, beans, cilantro and basil. Raised beds were created by the engineering students, compost was installed by the football team, and the garden was maintained by garden club students as well as under the supervision of Campus Ministry throughout the summer months.
 
The name for this garden was inspired by the Old Testament story from 1 Kings where the Prophet Elijah (who is also instrumental to Carmelite spirituality), through the power of God, does not let the widow and her son go hungry. Their jug of oil never goes dry and their flour bin never goes empty. Elijah’s Garden is a way that we cooperate with God in helping to feed our sisters and brothers who are hungry. In doing so we also keep the charisms and core values of our founders alive at Carmel Catholic.
